INGREDIENTS

  • 800 g Rootzz of Nature Jackfruit Original Sterilized, drained
  • 4 garlic cloves, finely chopped
  • 250 g shallots, finely chopped
  • 400 g mushrooms, quartered
  • 1 large winter carrot, cut into thick half-moons
  • 1 large parsnip, cut into chunks
  • 250 ml smooth red wine
  • 500 ml vegetable stock
  • 100 g tomato purée
  • 2 bay leaves
  • 2 cloves
  • 25 g hachee spice mix
  • 15 g parsley, chopped
  • 2 French baguettes, sliced

Chef’s Tip

The choice of wine makes all the difference here. Use a smooth, fruity red wine with soft tannins and low acidity, such as a Merlot or a Grenache. Jackfruit has a subtle natural tartness of its own, and a sharp or highly acidic wine will only amplify it. A round, mellow red gives the sauce depth and a gentle richness instead.

INSTRUCTIONS

  1. Drain the jackfruit and rinse under cold water.
  2. In a wide pan, fry the mushrooms together with the shallots and garlic until nicely browned. Add the carrot and parsnip and fry for approximately 5 minutes.
  3. Add the jackfruit, tomato purée, bay leaves and cloves and cook over low heat for 5 minutes.
  4. Add the red wine, hachee spice mix and vegetable stock. Leave to braise over low heat for 30 minutes. Season to taste and stir through some of the parsley. Remove the bay leaves and cloves.
  5. Serve in a shallow bowl with the chunky carrot pieces visible on top. Finish with parsley for a fresh green contrast and serve a few slices of baguette on the side.
