INGREDIENTS

  • 1 kg Rootzz of Nature Jackfruit Original Pasteurized, drained
  • 1 kg onions, sliced into half rings
  • 100 g plant-based butter
  • 1 litre vegetable stock
  • 4 bay leaves
  • 4 cloves
  • 40 g apple syrup
  • 4 tbsp ketjap manis
  • 40 g hachee spice mix
  • 1 kg prepared plant-based mashed potatoes
  • 1 kg prepared red cabbage with apple
  • 15 g parsley, chopped

Chef’s Tip

Hachee tastes even better the next day. Prepare it a day in advance, cool it quickly and store it in the fridge so the flavours can deepen overnight. Reheat gently and add a splash of stock if the sauce has thickened too much.

INSTRUCTIONS

  1. Rinse the jackfruit and leave to drain well. Fry the onions in the plant-based cooking butter for approximately 10 minutes, until soft and lightly golden.
  2. Add the jackfruit, vegetable stock, bay leaves, cloves, hachee spice mix, ketjap manis and apple syrup. Cover and braise over low heat until the jackfruit is tender and falls apart easily. Check from 90 minutes onwards and add a little extra water if needed.
  3. Remove the bay leaves and cloves. Pull apart only the largest pieces of jackfruit and leave to simmer gently for another 10 minutes.
  4. Heat the mashed potatoes and red cabbage separately.
  5. Serve the mash, hachee and red cabbage as three distinct sections on the plate and finish with chopped parsley.
